Plain pasta

Real old fashioned homemade pasta. The salt, baking powder and butter are optional. Also, try substituting 125ml milk or 3 beaten eggs for the warm water.


Ingredients 
Serves: 4 

  • 325g semolina flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 125ml warm water
  • 1 tablespoon butter

Method
Prep:30min  ›  Cook:3min  ›  Extra time:1hr drying  › Ready in:1hr33min 

  1. Mix together flour, salt and baking powder. Add warm water and butter; knead dough until stiff. Let rest a few minutes. Roll into a ball and quarter. Using 1/4 of the ball at a time, roll out 1 to 3mm thick. Cut into desired shapes. Let dry for 1 to 3 hours on flat surface.

To cook fresh pasta...

Bring a large pot of lightly salted water to the boil. Add the pasta, and cook for 2 to 3 minutes. Fresh pasta cooks very quickly. It will float to the surface when fully cooked. Drain, and use as desired.
